RECIPE: FRESH, HOMEMADE MUSHROOMS IN GARLIC SAUCE

Mushrooms in Garlic Sauce
Ingredients:
1 lb (45 g) fresh mushrooms, cleaned and cut into thick slices
1/2 cut (125 ml) dry sherry
5 cloves of garlic, peeled and whole
5 tbsp (75 ml)(organic…skip the pesticides*) olive oil
salt
2 tbsp (30 ml) fresh parsley (Italian flat leaf if possible) chopped*ChemicalFreeSkinny recommendation

Directions:
Heat the oil in a pan over medium heat. Add the garlic and fry until the air is fiagrant. Do not let the garlic burn. Remove the garlic (all you want to do is flavour the oil). Add all the mushrooms and cook, stirring, until almost done. Add the dry sherry and bring to the boil for a minute. This will drive off all the alcohol, but the flavour will remain. Sprinkle with salt and the chopped parsley.
